Heat the olive oil in a large pan (or paella pan if you have one). Add the rabbit and chicken pieces to the hot pan and sauté until the meat is lightly browned.
Now, peel, de-seed and chop the tomatoes (or just use a tin of chopped tomatoes;) and fry over a gentle heat, together with the pieces of pepper for around 7 to 8 minutes.
After 7 or 8 minutes add a little salt, the meat and the paprika and fry everything together. Add water to cover the mixture and leave to simmer for around 30 minutes. The simmering time will depend on the consistency of the meat but check after 30 minutes.
Ten minutes before the end of the estimated cooking time you should add the beans and the garrofó. If you do want to try the snails then this is also the time to add them – previously purged. At the end of the cooking time add more hot water and continue boiling for a further 4 minutes.
After the 4 minutes add the saffron and the rosemary and then simmer for further 5 minutes.
After 5 minutes add the rice and cook for another 5 minutes over a high heat.
After 5 minutes remove the pan from the heat and allow to stand for a further 3 to 4 minutes and then shout: “Alabe al cocinero” (Praise the cook:) and serve.
If you don’t fancy rabbit or snails you could try mussels, shrimps, prawns, and squid instead.

The problem we now face is which one to offer? We have numerous family friendly villas that offer all the extras outlined in the feedback, but even after a couple of days of deliberating we have only managed to reduce the list down to two. So, we were hoping you could decide for us?
Basically, the villa that receives the most votes is the one we will include in the Villa Parade one-week holiday competition.
